Sunchoke Pancakes Recipe
In a medium bowl, combine 3 cups flour (1/2 whole wheat flour and 1/2 wheat flour), 1/4 cup baking powder, 3 tsp sunchoke powder, 2 tsp cinnamon, seeds from 2 vanilla beans and zest from 1 lemon. In a blender, mix together 1 fresh apple and 2 cups unsweetened almond milk. Add this plus 1/4 cup olive oil and 2 tbsp agave to your flour mixture. Mix in slowly and stir until the liquid and solid mixtures have been fully combined, add more almond milk if needed. Heat up a griddle or pancake pan and pour desired amount of batter (1/4 cup is great) onto griddle over medium heat. Cook each side for about 1 1/2 mins. When you’re done with the pancakes, you can make the apple topping. Cube 4 apples to heated pan. Add a bit of water, 1/4 cup sweetener, a pinch of salt and 1/2 tsp vanilla extract. Cook on medium heat until they become soft. Stack the pancakes, add the topping and serve!
