You may be accustomed to seeing walnuts in your pantry and even using them in your cakes and bakes. But did you know how good for you they really are?
One of nature’s most perfect snacks, walnuts contain protein and fibre. This means they provide slow release energy, powering your day without spiking your blood sugar. In addition, walnuts also contain nutrients such as ellagic acid and omega-3 fatty acids.
Omega-3 is linked to good heart and brain health. Meanwhile, ellagic acid is a powerful antioxidant and helps prevent collagen breakdown. As well as providing a treat for your skin when eaten, you can also use walnut oil topically. We advise blending with a small amount of carrier oil to prevent irritation.
Why our walnuts are different
Walnuts are harvested in the autumn, when the nuts are ripe and ready on the trees. This means that, unless you buy them at exactly the right time (or are very lucky), you are likely buying walnuts which have been in storage for quite some time.
However, spending lots of time in storage affects the quality of the nuts. As they are rich in oils, they are extremely sensitive to changes in moisture, heat and light, which means that they can become rancid.
This is even trickier to manage when you are dealing with raw, unpasteurised walnuts, like ours. It’s important to keep the nuts raw so as not to destroy their precious nutrients, but how to keep them fresh without preservatives?
