Yogurt parfait with poppy seed oil recipe

In French, parfait means perfect. A perfect yogurt is essentially what this is! Yogurt is a delicious and healthy option on its own, but you can make a next-level breakfast or snack when you layer nuts, fruits and natural sweeteners with it.

There are so many dairy-free yogurts available now and plenty of low-sugar options as well. A plain yogurt is the best place to start, you can then use an array of seasonal fruits to bring it to life. If you plan ahead, making your own coconut yogurt is super easy as well. This way you have no sneaky sugars or fillers. All you need is full-fat coconut milk, some probiotics and a couple of days for fermentation.

Regardless of whether you make or buy your yogurt, parfaits are a fun way to change up your routine. You can get really creative and use season ingredients that you have laying around your kitchen.

My farmer’s market haul last week consisted of apples and figs. I just can’t get enough of these seasonal goodies. I swear, fresh fruit is like nature’s candy. I always have frozen blueberries for smoothies and love the way they turn the yogurt a deep purple color. The apples add a nice crunch but hazelnuts really contrast the creamy yogurt. For some extra vitamins, I drizzled Erbology Organic Poppy Seed Oil. A little maple syrup goes a long way, it really brings out the natural sweetness in all the ingredients. Last but not least, the nasturtium leaf was my finishing touch.

 

Ingredients

  • 4 tbsp coconut yogurt
  • ½ apple, sliced
  • 1 tsp Erbology Organic Poppy Seed Oil
  • 4 tsp frozen or fresh blueberries
  • 2 tsp maple syrup
  • 1 fig, sliced
  • 1 tsp hazelnuts, crushed
  • 1 nasturtium leaf

Here's how you do it

  1. First, layer ¼ of a sliced apple on the bottom of a tall glass. Add 2 tbsp of yogurt, 1 tsp of poppy seed oil, 2 tsp of blueberries and 1 tsp of maple syrup.
  2. The second layer is another ¼ of a sliced apple, 2 tbsp of yogurt, 1 tsp of maple syrup, 1 sliced fig, 2 tsp of blueberries and 1 tsp of crushed hazelnuts.
  3. Top it off with a nice nasturtium leaf and enjoy!
