How to use amaranth flour

Amaranth flour has a distinctive earthy flavour, subtle in small portions and rich in larger amounts. This ancient grain is versatile and perfect for baking bread, pancakes and cookies.

Store in a cool, dry place.

Gluten-free cookie recipe with amaranth flour

Preheat oven to 180º C (350º F). In a small bowl, combine 2 tbsp ground flax seeds with 6 tbsp water to prepare your “vegan egg”. Always use a ratio of 1:3 when making a “vegan egg” and then set aside until it thickens. In a separate bowl, combine 2 cups Erbology Organic Amaranth Flour, 3/4 cup unrefined whole cane sugar, 1/2 tsp baking powder, 1/4 tsp cardamom spice and a pinch of cinnamon. Add in 1/2 cup extra virgin coconut oil (not melted) and your “vegan egg”, mixing until you form a dough. Make sure your countertop is clean, then use a layer of amaranth flour to prevent your dough from sticking to the counter and rolling pin. Roll out the dough to desired thickness, then shape with festive cookie cutters. Place cookies on a tray greased with coconut oil or on parchment paper. Bake for 12-17 mins, flip your cookies halfway through. Let the amaranth cookies cool. Now they are ready to eat, decorate, serve or gift!
