Versatile flavour

Erbology Organic Aronia Powder has a pleasant, mildly sweet flavour. Add 2-3 teaspoons to your yogurt, smoothie, or porridge for extra antioxidants and fibre. Aronia also goes great in soups and stews. Not water soluble. Store in a cool, dry place.

Beetroot and aronia powder soup recipe

Wash 3 medium beets, wrap in foil and roast at 350° F for 25-30 mins. While beets roast, wash and chop 2 small cauliflowers, 2 medium parsnips, 1 large potato and 1/4 leek. Heat up a deep pan with 2 tbsp grape-seed oil and add chopped leek. Once soft, add the rest of the veggies for 5 mins. Pour 6 1/3 cups of water over the veggies and bring to a boil. Strain the water off the veggies, saving 4 cups of stock. In a blender, combine beets, veggies, caraway seeds, lemon juice, aronia powder and coconut milk. Blend well, adjusting the consistency with the stock.

For the mushroom topping, wash and slice 2/3 cup of chestnut mushrooms. Heat up 1 tbsp rapeseed oil on a pan and sauté the mushrooms until brown. Add 1 chopped garlic clove, 1 tsp of lemon juice and a pinch of salt.

Pour soup into bowls, add the mushroom mix and then drizzle Erbology Sea Buckthorn Fruit Oil for the perfect fruity touch!
