Popped amaranth is so good, you might spoon it out of the box just like we do. This light nutty delight is naturally gluten-free. It is also an excellent source of dietary fibre, minerals and high-quality protein. Amaranth contains all nine essential amino acids, including lysine. Among other things, your body uses lysine to form collagen, the main structural protein in your skin. Although further research is required, one study has shown that lysine may even help reduce stress levels.
How to use popped amaranth
Erbology Organic Popped Amaranth is a delicious nutty topping that you can simply sprinkle over porridge, yogurt or salad.
Store in a cool, dry place. Once opened, store airtight and use within 14 days.
Use your stove top to melt 1/4 cup raw coconut oil. In the meantime, combine 1/3 cup pitted dates and 1/2 cup nut butter in a food processor, blending until smooth. Add melted coconut oil and continue to blend.
In a medium-sized mixing bowl, combine 1 cup Erbology Organic Amaranth Pops, ¼ cup golden raisins, ¼ cup almonds (coarsely chopped), ¼ cup raw pumpkin seeds, 1 tbsp flax seeds and 1 tsp fresh lemon zest. Add in the mixture from the food processor, using your hands to combine and then press the mixture into a square or rectangular pan. Place the pan in the fridge to cool for 15 mins and then cut into square or rectangular bars.
