Aren’t there already enough almonds? That’s what we said before we understood. Nuts are typically stockpiled in huge amounts, drying up in every way. And then you get them.
We found almond farmers in the volcanic Italian island of Sicily. Together, we prepare almonds in human-sized lots. We shell, and then we deliver right to you… nothing lost, all gained.
Almonds are potent with protein, vitamins and minerals. They are some of the best sources of protective vitamin E and energy boosting riboflavin. Almonds contain magnesium, iron, copper, and calcium.

Cook 5 asparagus spears in a pan of salted boiling water for 10-12 minutes until tender. Then drain, cut off and keep the tips for garnish.
Add 1 tbsp olive oil in a saucepan and cook ¼ cup chopped spring onions over low heat for 2-3 minutes. Stir in 1 cup rice (Arborio or Carnaroli) and cook for 1-2 minutes.
Add a ladleful of plant-based milk or vegetable stock and cook, stirring, until it has been absorbed. Continue adding the liquid, a ladleful at a time, and stir continuously. It will take around 20 minutes. Keep some extra liquid at hand; depending on what rice you use, and how creamy you like your risotto, you might need more.
When the rice is cooked, add the chopped asparagus, 1 tbsp chopped parsley, ½ cup chopped spinach, 1-2 tsp nutritional yeast, salt and pepper to taste and mix well.
Place the risotto on the plates and garnish each plate with crushed Erbology Organic Sicilian Almonds and asparagus tips. Enjoy!
