Why you’ll love our organic walnuts

We thought there were enough walnuts out there – until we tried them. Walnuts are bought in large quantities and stored in warehouses for months before they even hit the shelves, gradually losing flavour, energy, and texture.

In partnership with farmers in Transylvania, ‘the land beyond the forest’, we have produced walnuts in small batches. Once removed from shells, the kernels are sent right to you…moisture, taste, and nutrition value intact!

Walnuts are a source of polyunsaturated fatty acids, including the two essential fatty acids that our body cannot produce. These nuts, known as food for the brain, are also rich in ellagic acid, magnesium, and vitamin B-6.

Walnuts for the brain

Walnuts are an excellent ingredient or snack, especially when hydrated (activated) overnight.

Store in a cool, dry place. Once opened, store airtight.

Sweet potato gnocchi

Mash one cooked and peeled sweet potato. Add a pinch of salt and 2-3 cups mixed flour, one cup at a time. We used 1/2 white wheat and 1/2 semolina flour. Knead to a soft, elastic dough. The ratio of potato to flour is important. If there is too much flour, the gnocchi will be too hard and sticky. 

Shape the dough into a long roll, then cut into small pieces. Using your hands and a fork or a gnocchi board, shape each gnocchi and place on a plate, dusted with flour. To cook, bring a large pot of lightly salted water to a boil. 

Meanwhile, make the walnut sauce by blending 1 cup Erbology Organic Walnuts (hydrated overnight), 1 tbsp nutritional yeast, pinch of salt, ¼ garlic clove, 3-4 fresh thyme leaves, 1 tsp Erbology Organic Walnut Oil½ cup filtered water, and black pepper to taste.

When the water is boiling, add the gnocchi, a few at a time. When they rise to the surface, it means they are cooked. Remove with a slotted spoon, drain excess water, put in a bowl and pour the walnut sauce over them.

Place the gnocchi on plates and garnish with fresh herbs and a slice of lemon. Enjoy!
