Alongside polyunsaturated fatty acids (PUFAs) that have been studied for their effects on cognitive function, walnut oil is a source of ellagic acid.This polyphenol has been recently tested for its ability to protect collagen from degradation. Ellagic acid may also fight inflammatory responses caused by UV-B rays and therefore protect the skin against premature ageing.

This quick and easy soup recipe boasts an array of nutrients and is full of flavour.
In a high speed blender add 1 ½ cup fresh baby spinach, 1 medium cucumber, 1 cup filtered water, juice from ½ lemon, ¼ apple, 1 small batch fresh parsley (keep 4-5 leaves for garnishing), 1 tsp chopped ginger, 1 clove garlic, a pinch of salt and 2 tsp Erbology Organic Cold-pressed Walnut Oil. Blend until smooth.
To garnish, add croutons, 1-2 tsp hemp seeds, fresh parsley and 1-2 tbsp chopped and pitted Kalamata olives. Finally, top it off with a drizzle of Erbology Organic Cold-pressed Walnut Oil.
