Vegan An immune-boosting cocktail with a zesty kick. When I was a little kid, my mom was always finding sneaky ways to add fruits and vegetables into my diet. The tables sure have turned. Now I incorporate nutritious real foods wherever possible. Like this cocktail, for example. Traditional cocktails usually involve sugary juices or mixes to cut the flavor. None of that artificial stuff over here. This cocktail is so light and perfectly sweetened. It comes down to the balance of the tangy citrus, sweet raspberry and earthy carrot and cucumber juice. Carrots, cucumber, raspberries and bergamot all boast impressive health benefits and are low on the glycemic index. These ingredients are also antioxidant-rich, flavorful and highly refreshing. Ingredients

¾ cup carrot juice ¼ cup cucumber juice 3 tsp raspberry puree ½ Erbology Organic Bergamot Shot 1 tsp agave nectar 3-4 mint leaves to garnish 1-2 carrot strips to garnish

Here's how you make it

  1. First, juice the carrot and cucumber. For ¾ cup carrot juice you’ll need 3-4 medium carrots, washed and peeled. For the cucumber juice, 1 medium cucumber is enough.
  2. For the raspberry puree, take ¼ cup fresh or frozen raspberries and mash them with a fork.
  3. Take a cocktail glass and add the carrot juice, cucumber juice, ½ Erbology Organic Bergamot Shot, 1 tsp agave nectar and 3 tsp raspberry puree. Mix well.
  4. Garnish with a couple of carrot strips and fresh mint leaves.
  5. Enjoy!
