But we think it's our Erbology Organic Tigernut Granola On the Go that really makes this recipe. The texture of this granola is something special. It's chewy and wholesome, and a little goes a very long, very satisfying way. It's completely substantial, packed as it is with nutrients and fibre. An interesting counterpoint to the sunny, fresh flavours of the other ingredients in these pops, the granola makes for a recipe with some serious character. Elegance is nice, but fun is essential. Try buying molds in novelty shapes for the pops - perfect if you're making them for a party or for the kids! Don't forget to spare a thought for those unsung heroes, the popsicle sticks. There are sustainable bamboo sticks on the market, or recycled paper ones embedded with flower seeds. Yet another possibility is sticks shaped like endangered rainforest creatures, with messages that you see more of as your popsicle is eaten. Availability depends on where in the world you are. However, there are definitely options out there. There are also reusable individual molds that you can bring out and about with you and eat the pop straight from, instead of having to extricate the delectable sweetness from the mold, stick intact, before you can eat it. We do have some tips on that later on, though...
Like most of our recipes, this one is ripe for fine tuning. We love a berry pop, with blackberries, raspberries, and blueberries. You could also use different variations of the granola. The type with aronia berries would be a perfect match for a berry pop, but we have to say that the dark chocolate kind would add extra gratification. You could also switch maple syrup in for the honey or agave nectar. Finely chopped fresh mint could be a wonderful addition to a berry ice pop recipe, too. Finally, you will have to make sure that you can get the ice pop out of the mold without breaking it! If you have any issues, just immerse the entire mold, up to the top opening, in a bowl of warm tap water for 30-45 seconds. Then jiggle gently... and savour fully.
