Experts believe the Romans began cultivating raspberries in the 4th century, and are responsible for the fruit’s spread across Europe.(1) While we generally think of raspberries as being red, you can actually find yellow, purple, and black varieties too. People prized the plant for its medicinal qualities and vivid pigment, as well as the taste of its berries. Botanically speaking, raspberries are an aggregate fruit. This is because each tiny drupelet that makes up the berry contains its own seed. A member of the rose family, today farmers grow raspberries in many countries around the world. And if there’s juice in the bottom of the punnet, that’s a sign the fruit inside has been squished! As such, it’s best to only wash them when you’re ready to eat them, and to do so gently. So, let’s get into the details of how to make lavender ice cream. We think you’ll be pleasantly surprised by how simple it is! The best part is that it not only tastes phenomenal, but we’ve also loaded the recipe with healthy ingredients. To create the base, you’ll blend full-fat coconut milk with cashew nuts that you’ve soaked overnight. This ensures they’re soft enough to make the raspberry and lavender ice cream with. Thanks to their high fat content, crafting ice cream with nuts gives it a gorgeous creamy texture without the use of dairy. We also recommend that you add zesty lemon juice, warming vanilla, and a pinch of sea salt to the mix. This results in a greater depth of flavour. Feel free to put your own spin on this lavender ice cream by swapping the lemon for yuzu or lime. The recipe additionally calls for agave nectar to give it a burst of sweetness.   • 1 cup cashew nuts, soaked overnight
  • Juice from one medium-sized lemon
  • ⅓ cup agave nectar
  • Pinch of sea salt
  • ⅓ vanilla bean
  • ½ cup full-fat coconut milk
  • 3-4 drops of Erbology Organic Lavender Essential Oil
  • ½ cup fresh raspberries, pureed

  • Size: 320 g
  • Serv.size: 23 g

  1. In a high speed blender, add the cashew nuts together with the lemon juice, sweetener, sea salt, vanilla, coconut milk and drops of the lavender essential oil.
  2. Blend well until smooth and creamy.
  3. Transfer the mixture to an airtight container.
  4. Drizzle with half of the raspberry purée and gently stir using a knife to create a swirl. Drizzle with the rest of the raspberry purée, close with a lid and freeze for 4 to 6 hours, or overnight.
  5. Before serving, leave the ice cream at room temperature for at least 15 minutes. Enjoy!
