How to use amaranth flour

Amaranth flour has a distinctive earthy flavor, subtle in small portions and rich in larger amounts. This ancient grain is versatile and perfect for baking bread, pancakes and cookies.

Gluten-free cookie recipe with amaranth flour

Preheat oven to 350º F. In a small bowl, combine 2 tbsp ground flax seeds with 6 tbsp water prepare your “vegan egg”. Always use a ratio of 1:3 when making a “vegan egg” and then let set aside until it thickens. In a separate bowl, combine 2 cups Erbology Organic Amaranth Flour, 3/4 cup whole cane sugar (unrefined), 1/2 tsp baking powder, 1/4 tsp cardamom spice and a pinch of cinnamon. Add in 1/2 cup extra virgin coconut oil (not melted) and your “vegan egg”, mixing until a dough forms. Make sure your countertop is clean, then use a layer of amaranth flour to prevent your dough from sticking to the counter and rolling pin. Roll out the dough to desired thickness and then shape with festive cookie cutters! Place cookies on a tray with coconut oil or on  parchment paper, bake for 12-17 mins, flipping your cookies halfway through. Let the cookies cool and then they are ready to eat, decorate, serve or gift!
