Preheat oven to 350º F. In a small bowl, combine 2 tbsp ground flax seeds with 6 tbsp water prepare your “vegan egg”. Always use a ratio of 1:3 when making a “vegan egg” and then let set aside until it thickens. In a separate bowl, combine 2 cups Erbology Organic Amaranth Flour, 3/4 cup whole cane sugar (unrefined), 1/2 tsp baking powder, 1/4 tsp cardamom spice and a pinch of cinnamon. Add in 1/2 cup extra virgin coconut oil (not melted) and your “vegan egg”, mixing until a dough forms. Make sure your countertop is clean, then use a layer of amaranth flour to prevent your dough from sticking to the counter and rolling pin. Roll out the dough to desired thickness and then shape with festive cookie cutters!
