Amaranth grain has a distinctive earthy flavour with a nutty sweetness and gelatinous consistency perfect in porridge or soup.
Once the staple of the Aztecs, amaranth is a nutritious gluten-free ingredient with a fiber and protein content to be proud of. Unlike most grains, amaranth contains all nine amino acids, including methionine and lysine. Lysine plays a key role in the formation of collagen, while methionine help maintain healthy liver function.

How to cook amaranth grain
Amaranth grain tastes great hot or cold, in starters, mains or desserts. It works perfectly as an ingredient in your porridge, salad or soup.
Put 1 cup amaranth grain and 3 cups cold water in a saucepan to make 3 cups cooked amaranth. Bring to a boil, then reduce heat and simmer, uncovered, until water is absorbed, for approx. 20 mins.
Store in a cool, dry place.
First, cook 2 cups green lentils with 4 cups water (2:1) and 2 cups Erbology Amaranth Grain with 6 cups water (3:1). As amaranth and lentils cook, prep your veggies. Peel and shred 3 large carrots, chop 2 small parsley bunches, 2 small red onions and 4 garlic cloves. In a mixing bowl, add your veggies, cooked lentils, 1 cup breadcrumbs, 1/3 cup Tamari soy sauce, salt and pepper to taste and a pinch of thyme and chilli flakes.
Mix well, squishing the mixture between your hands, making sure to break the lentils. When the mixture starts coming together, mix in cooked amaranth grain with a wooden spoon. Form small patty shapes, then place on a pan. Heat grape seed oil and cook patties over medium heat for 2-3 mins on each side. Eat them right away or store in an airtight container in the fridge. They go perfectly with salads and/or veggie burgers.
