Pumpkin seed oil is ideal to finish a warm soup or salad, especially with a variety of root vegetables and grains. You can also apply a small amount of this precious oil to your hair and skin at night.

Store in a cool, dark place. Not suitable for heating up.

Preheat the oven to 400ºF (204ºC) and arrange 4 Brussels sprouts and 2 cups cauliflower on a baking sheet. Drizzle with Gochujang paste and sea salt. Mix well and bake for 20 mins. Wrap ½ beetroot in aluminum foil. Put on the same baking tray and bake for about 25 mins. In the meantime, cook the amaranth

For the dressing, combine 4 tbsp apple cider vinegar with 4 tbsp agave syrup, 1/2 tsp sea salt and 1 tsp mustard. Mix well and set aside.

Divide 1 cup rocket salad in two bowls. Add the baked veggies, placing them next to each other. Add the amaranth. In the middle, add one scoop hummus. Drizzle with Erbology Organic Pumpkin Seed Oil and add the dressing. Enjoy!
