  • 1 tbsp coconut sugar
  • ½ tsp baking powder

  • 55g / 1.9 oz vegan butter, cubed
  • 2-3 tsp soy milk

Filling

  • 260g / 9 oz blueberries, fresh or frozen
  • ⅓ cup coconut sugar
  • ½ tsp ground cinnamon
  • Juice from ½ lemon
  • 2 tsp Erbology Organic Lavender Water
  • 1-2 tsp coconut flour, for garnish

Here's how you make it

  1. Preheat the oven to 180º C / 350º F.
  2. Add flour, coconut sugar, baking powder and sea salt to a medium bowl. Mix well.
  3. Add the vegan butter and gently mix with your hands, until almost all the flour is covered in the butter. 
  4. Pour 2-3 tsp of milk,  and mix until the dough comes together. Leave aside.
  5. In a baking dish, add the blueberries together with the coconut sugar, cinnamon, lemon juice and lavender water. Give it a good mix.
  6. Take small bits of the dough mixer, slightly press it between your fingers, then add on top of the blueberries. Repeat until all the blueberries are covered with the biscuit layer.
  7. Bake the cobbler for about 30 minutes, until the blueberries are well cooked and golden brown on top.
  8. Leave the cobbler to chill for 10 minutes, then dust with coconut flour, serve and enjoy!
