Peas are a common sight on our plates, whether in a pea soup recipe or another dish. As such, we tend not to give them much thought. However, the plant is more interesting than you might expect. Although we think of the pea as a vegetable, it’s technically a legume. That puts it in the same family as peanuts, chickpeas, and lentils. Add your chopped spring onion, celery, yellow pepper, and garlic cloves, then sauté for about five or six minutes on a low to medium heat.

  • ¼ cup spring onions, sliced
  • ¼ cup celery, chopped
  • ⅛ cup yellow pepper, chopped
  • 3 garlic cloves, sliced
  • 2 cups green peas, frozen
  • 2 ⅛ cups vegetable broth, salted

  • 2-3 tbsp full-fat coconut milk
  • Black pepper, to garnish

Here's how you make it

  1. Heat 2 tbsp vegan butter together with avocado oil. Add the spring onions, celery, yellow pepper and cloves and saute for about 5-6 minutes, on low to medium heat.
  2. Add the green peas and vegetable broth, cover and simmer for 25 minutes.
  3. Add alfalfa powder, black pepper,  coconut milk and 1 tbsp vegan butter and mix well. Taste and adjust with salt, if needed. 
  4. Transfer the soup into a high speed blender and mix well until creamy. If the soup it’s too thick, add more coconut milk.
  5. Pour into serving bowls and garnish with black pepper and mint leaves. Enjoy!
