Amaranth grain is a source of dietary fibre, protein and minerals. 100g of uncooked amaranth grain contain 10g of fibre and 16g of protein. Minerals include iron (11g / 100g), magnesium (200mg / 100g), phosphorus (450mg / 100g) and others.
