I heard that Jerusalem artichoke is high in iron. Are these traces of iron only?

We’re pleased to tell you that Jerusalem artichoke contains a lot more than traces of iron! One cup of sliced Jerusalem artichokes provides you with more than a fourth of the recommended daily amount of iron (or about 3.4mg per 100g). To give you a better sense of how much that is, the equivalent amount would be found in a beef hamburger patty. We promise you, Jerusalem artichoke has a LOT less fat, cholesterol, and calories than a hamburger.
