Fennel, apple and honey salad

Fennel... once you like it, there is no turning back. A friend once described this green, anise-tasting vegetable as one of the true pleasures of adulthood. In other words, responsibilities, schedules, and five-year plans urgently need subtle, ever-deepening gratifications such as fennel. Above all, summer or winter, it adds a fresh, alive flavour. So cook it, don't cook it. Certainly the texture sharpens the palate either way. Moreover, fennel stands on its own just fine. In other words, slice delicately. Dress minimally with high-quality extra virgin olive oil, a squeeze of lemon, some sea salt and freshly ground black pepper. Then add a handful of finely chopped parsley if you wish. And you have a winner right there. Take on picnics; serve up alongside other small salads; plate up with the protein of your choice. Make more than you need and leave in the refrigerator. Certainly, it just tastes better the day after.

Chilled courgette dip recipe

We think of this as a plant-based - or, rather, plant-enhanced - version of the classic Greek mezze called tzatziki. However, in this dish the sturdier textures of courgette stand in for the coolness of cucumber. Further, the slight aniseed of dill stands up to courgettes with suitable astringency, but you could also try the mint that is usual in tzatziki. Moreover, taking your cues from this comparison, why not make a double batch. Store one batch in the fridge to accompany a tempeh kebab. Cucumber raita recipe

This cucumber raita is a wonderful concoction to have in your refrigerator at any given time. That is to say, after you scoop up to your heart's content with your Erbology Personalised Crackers, you could enjoy over stews and soups. Alternatively, use as a spread in sandwiches. Moreover, plate with some scrambled harissa tofu for a lovely brunch. Top roasted aubergine or roasted vegetables of your choice. Spoon over a baked sweet potato. Or add to a plate of raw crudites and salads for a light lunch or supper. We particularly enjoy the raisins in this raita recipe. Their pleasing chewiness and sweetness brings a voluptuous touch to the cooler ingredients. And sumac, garlic, mint, citrus... that combination will bring a spring to your step and a spark to your eye, all right.

Sweet potato dip recipe

Warmth, softness, ease... these are some pretty good words, aren't they? So, there is no doubt about the taste equivalent for these words. That is to say, it has got to be potatoes. If by potatoes you are thinking a floury white potato, that is only out of force of habit. After all, the earthy, rich sweet potato is just as much a potato. Further, when you compare baked white potatoes and baked sweet potatoes, you see that the latter have more micronutrients such as magnesium, vitamin C, phosphorus, calcium, and iron. They also offer more fibre.(1) Moreover, sweet potatoes offer a range of antioxidants that help your body ward off harmful free radicals in the environment.(2)

Artichoke hummus recipe

It's not completely accurate to call this a hummus recipe. This dish is actually somewhere wonderfully in between hummus and a creamy, indulgent artichoke dip. That makes it a perfect hybrid creature in our book, as the addition of chickpeas brings protein and ballast. This spread could now carry a sandwich all on its own, with the addition of a few fresh vegetables. Or, as seen here, it's a nice variation on a party dip. Glowing magenta pomegranate seeds add colour and tartness. You could also add fresh chopped herbs on top for colour and flavour. Parsley, mint, or both would work beautifully.
